As the main part of every meal we needed a bit of everything, traditionally Punjabi dishes that feature the best flavours, textures and also have a little bit of nutrition packed into them. Start with this Kachumber of Cucumber, Red Radish, Tomatoes and Onions along with the classic Pindi Chole and Baingan Bharta that is flavoured with fenugreek leaves and topped with pomegranate. It does not get more desi than a creamy yoghurt Kadhi with Pakoras and a Smoked Dhabe Wali Dal. Of course you're going to need something to cool off with, so you could also add in this delicious, yet nutritious Pumpkin Raita too.

Missi roti is a tasty, soft flatbread prepared with gram flour, whole wheat flour, sorghum flour and spices. It tastes amazing when eaten with a dollop of butter/ghee.
